Crispy okra is a stir-fried okra dish coated with semolina to make the okra crispy. This is a quick side dish and an easy snack.

Kurkuri Rava Bhindi/ Crispy Okra Fry
Kurkuri Bhindi, as the name suggests, gives a complete picture of the recipe. We can all say this is crispy okra fry. Adding rava makes it even crispier.
To make crispy okra fries, you can also use a mixture of rice flour, gram flour, and spices. But frying semolina makes this even better and crispier.

This is an easy recipe that took me hardly 10 minutes to prepare and 15 minutes (or less) to cook.

How to make crispy okra fry?
Wash and clean okra well in advance. Wipe with a dry towel and air dry for some time.
Remove the head and tail of each okra.

Slit into two halves.

Add all spices, rava, salt, ginger, and garlic paste. Mix well with bhindi.

Let it rest for some time.

Then, heat some oil in a pan. Place coated bhindi one by one and cover with a lid. Cook on low flame for 2 - 3 minutes.

Then carefully turn them to the other side and cook till both sides are perfectly cooked and crispy.
Remove from oil once done and place on a paper napkin or tissue. Serve hot.

Can I make this okra in the oven?
If you are on a low-carb diet, this method is better. To make it in the oven, preheat the oven to 180 degrees for 10 minutes. Then line the baking tray with parchment paper and place all coated bhindi on it. Spray or brush it with a little oil on top. Bake at 180 degrees C for 18 - 20 minutes.

Ingredients
- 20 - 25 bhindi / okra
- 1 tsp coriander powder
- 1 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/2 tsp turmeric powder
- 1/4 cup rava/ semolina
- 1/2 tsp salt
- 1/4 tsp hing or asafoetida
- 1/4 tsp aamchur powder
- 5 - 6 tbsp refined oil
Instructions
Wash, clean and dry bhindi or okra.
Remove head and tail. Slit into 2 halves.
In a mixing bowl take rava, all dry spices including salt, ginger garlic paste.
Add okra halves and toss well so that everything will get coated well on bhindi.
Let it rest for 5 - 7 minutes.
Then heat oil in a pan. Place coated bhindi one by one. some rava will come out but don't worry about it.
With help of a tong flip sides and cook both sides covering with a lid.
Cook til it looks crispy on both sides.
Once done remove from oil and place on paper towel to get rid of excess oil.
Notes
Since the mixture is bit dry, it will not coat the bhindi completely (as in fritters). So while frying the coating on outer side will get removed during frying.
Try to press more mixture into the inner part. Coating will stick because of slimes. While turning be careful else all mixture will be removed from okra during the process of frying.

Lovely recipe, Ipsa!We often make this Kurkuri Bhindi recipe at home. It's a hot favorite dish amongst all of us.
I also liked your suggestion of using Rice flour and Gram flour in this recipe. I think it gives an interesting texture to Bhindis.

I make this in the Air Frier - no need to flip, and it gets evenly cooked on both sides. 10 to 12 minutes at 160 Degrees Celsius. Uses less oil also - lightly apply oil with a brush. Excess oil, if any, drains out into the bottom container.Reply
